Kala Masala

Kala Masala is a traditional Maharashtrian spice blend, especially associated with Kolhapur, known for its deep blackish brown colour, bold aroma, and intense spicy flavour. It is prepared by dry-roasting a variety of whole spices, including dried red chillies, coriander seeds, cumin, cloves, cinnamon, black pepper, coconut, and sesame seeds, and then grinding them into a coarse or fine powder.
