Ingredients:
- 1 cup sprouted matki (moth beans), soaked overnight
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 1 tsp ginger-garlic paste

- 1 (14.5 oz) can diced tomatoes

Instructions:
1. Cook the Matki: Drain and rinse the soaked matki. Boil in water for 5-7

translucent. Add ginger-garlic paste and turmeric powder, and cook for 30
Seconds.

Simmer for 5 minutes, letting the flavors blend.
4. Simmer & Serve: Add cooked matki and salt to taste. Simmer for 2-3 minutes.
5. Dish it Up: Serve hot in bowls with your choice of toppings – chopped onions,
sev, lemon wedges, and fresh coriander leaves.
